Skirt Steak

OVEN

    1. Remove skirt steak from fridge 45 minutes prior to cooking
    2. Salt the steak on both sides, rubbing it into the meat with your fingers.
    3. Preheat oven to 450 degrees
    4. Spray baking sheet with cooking spray and put steaks on the baking sheet.
    5. Put in middle oven rack and cook for 5-6 minutes until golden brown crust forms.  Flip over and cook another 4-5 minutes.
      • Follow chart below for desired doneness
    6. When slicing, make sure you are cutting against the grain

 GRILL

    1. Brush grates w/ olive oil to prevent sticking
    2. Preheat grill to 450 degrees
    3. Cook skirt steak on grill for 10-15 minutes, depending on your desired doneness (flipping over halfway through)
      • Follow chart below for desired doneness
    4. When slicing, make sure you are cutting against the grain 

Chart – Desired Doneness

  1. Medium Rare – Remove from oven at 125/130 degrees and let rest covered w/ loose tent of foil for 5-10 min until internal temp reaches 130/135 degrees
  2. Medium – Remove from oven at 135/140 degrees and let rest covered w/ loose tent of foil for 5-10 minutes until internal temp reaches 140/145 degrees
  3. Medium Well– Remove from oven at 145/150 degrees and let rest covered w/ loose tent of foil for 5-10 minutes until internal temp reaches 150/155 degrees
  4. Well Done – Remove from oven at 155/160 degrees and let rest covered w/ loose tent of foil for 5-10 minutes until internal temp reaches 160/165 degrees
